We’ve finally reached the time of year when I can put away the crockpot and start making some pasta salads. AKA- my favorite time of year. I love pasta salads and I’m on a mission this year to step up my pasta salad game. I have 4 or 5 favorites but I need to add some more to the rotation. This pasta salad happened courtesy of a pantry clean out. And it was delicious!
Ingredients:
1 box bowtie pasta
2 cups cooked & shredded chicken breast
1 bottle Caesar dressing
1 bag Almond Accents Honey Roasted & Cranberries
1/2 cup Parmesan cheese, shredded
Directions:
1. Cook pasta noodles as directed; drain and rinse with cold water.
2. Combine all ingredients in large serving bowl and toss to coat.
3. Serve chilled.
Everyone loved this! We had no leftovers which surprised me because pasta salad is not Matt or Ty’s favorite style of dinner. The flavors were fantastic. I think this would be delicious served on a bed of spring green lettuce mix. That’s what I’m going to do next time!
