I’m a huge lover of comfort food. It’s one of my go-to dinner categories through out the Fall and Winter months. I’m a warm weather gal so I need the comfort food when it starts getting chilly. My daughter described this recipe as “a warm hug for your tummy”. I love that girl. But this dinner was definitely my idea of comfort food.
Ingredients:
3-4 frozen chicken breasts
1/2 cup onion, chopped
1 can cream of chicken soup
2 Tbsp flour
1 cup frozen peas
1 cup frozen corn
Biscuits, cooked
Directions:
1. Layer first four ingredients in bottom of crockpot; mix well.
2. Cook on Low for 7 hours or High for 4 hours.
3. 30 minutes before serving, shred chicken and mix.
4. Add frozen corn and frozen peas; stir to combine.
5. Cover and cook on High for 30 minutes.
6. Spoon mixture over top of cooked biscuits.
Doesn’t that look delicious? You can also add sliced carrots and make it more of a chicken pot pie with biscuits. My kids are happy with peas and corn so I stick with that combination. I always butter my biscuit before topping it with the chicken mixture but my family prefers no butter- it’s all a matter of taste.
