We are a family of pasta lovers but I feel the urge to switch it up from basic spaghetti and our usual Cajun Chicken Fettuccine Alfredo, no matter how delicious it is. Everyone in the house loves tortellini and it’s just a nice change. I don’t buy the expensive tortellini, I go straight for the bag of generic frozen tortellini. It’s much cheaper and it’s just as good when you’re using it in a baked dish such as this one. This is one of those dinners I keep the ingredients on hand to make in a pinch when my day gets busier than anticipated.
Ingredients:
1 bag frozen cheese tortellini, cooked
2 cups shredded mozzarella cheese
1 lb smoked sausage link, sliced
1 jar (24oz) spaghetti sauce
1 can Italian style diced tomatoes, undrained
1 can (4oz) sliced mushrooms
Directions:
1. Combine cooked tortellini with spaghetti sauce, sliced mushrooms, tomatoes, and sausage.
2. Pour into baking dish.
3.Top with mozzarella cheese.
4. Bake at 350 for 15 minutes.
5. Broil on Low for 2-3 minutes until cheese begins to brown.
I love this dish because it’s not only full of flavor but it’s packed with vegetables. I’ve made this with ground beef and with Italian sausage before and it’s just as good. I can have this on the table in less than 25 minutes which is huge when you’re managing a busy household.
