I adore seafood salad in the summer time. I used to make a really fancy one with expensive ingredients but that was before I had children who eat enough in one meal to feed a small nation for a month. I’ve tried a bunch of different seafood salad recipes over the years and finally tweaked and combined a few to create one that we all enjoy.
Ingredients:
14 ounces imitation crab
2/3 cup mayonnaise
2-3 stalks celery, finely chopped
1/2 tsp Old Bay seasoning
salt to taste
1 bag hoagie rolls
Directions:
1. Separate & chop crab into 1/2 inch pieces; add to large bowl.
2. Add mayonnaise and gently stir to combine.
3. Add celery and seasonings; combine well.
4. Cover and refrigerate for at least 1 hour to chill.
5. When ready to serve, add approximately 1/2-3/4 cup of crab salad to hoagie roll and sprinkle with a dash of Old Bay seasoning or dill.
I serve this crab salad on hoagie rolls because of the aforementioned hungry children. But it’s also delicious on ritz crackers. It would be a fabulous appetizer on top of sliced cucumbers if you shred the crab meat instead of chopping it. In fact, that might be one of my holiday appetizers this year! The kids love this. If your whole family likes dill then you can add 1/2 tsp to the salad instead of using it for garnish.
