I stumbled upon this recipe on accident. I meant to buy the ingredients for another dinner but forget a few key components so I ended up throwing this together out of stuff I had on hand instead. And it was a hit. The kids loved it. And the dish was very inexpensive!
Ingredients:
1 box penne pasta
2 cups cooked & shredded chicken
1 can whole kernel corn, drained
1 can diced tomatoes
1/2 cup diced onion
2 cups favorite BBQ sauce
1/4 cup half and half
2 cups shredded Monterey Jack cheese
Directions:
1. Cook and drain pasta.
2. Add pasta, corn, chicken, tomatoes, and onion to 13×9 baking dish sprayed with cooking spray.
3. Mix BBQ sauce and half and half together.
4. Stir sauce into pasta mix.
5. Top with cheese.
6. Bake at 350 for 20 minutes.
